Pink Coconut Chocolate Hearts

As you can tell I love Valentines Day and one of the best parts of the holiday is the boxes of chocolate. Out of those red and pink heart shaped boxes my favorite type of chocolate is the coconut ones. I wanted to make a recipe that was festive for Valentine’s Day, had lots of coconut, and plenty of semisweet chocolate. This recipe can be modified to change the color of the coconut and type of chocolate used. I think it would be quite fabulous with white chocolate and red coconut too. This recipe is very simple and should make 5 large hearts or many smaller ones.


  • 14oz can of sweetened condensed milk
  • 3 1/2 cups of sweetened shredded coconut
  • red or pink food coloring
  • 2 cups of semisweet chocolate chips


Mix together shredded coconut, food coloring, and sweetened condensed milk in a medium large mixing bowl. 




single-pink-coconut-heart-squareLay down wax paper on to a cookie sheet. Using a heart shaped cookie cutter or freehand, press the coconut mixture into heart shapes.






five-pink-coconut-heartsAfter you’ve completed your heart shapes, place in freezer for at least 30 minutes. This will give time for them to set up and harden.





melting-chocolateWhile your coconut is cooling, melt the chocolate chips in a double boiler on the stove. If you don’t have a double boiler, heat your chocolate in the microwave in 30 minute increments, stirring vigorously between each heating.



laying-out-chocolateSpread chocolate into the shape of a heart either free hand or using your heart shaped cookie cutter as a template. Place your cooled coconut heart on top of the melted chocolate template. Covered your coconut heart with melted chocolate.






Place chocolate coconut hearts back in the freezer for at least 30 minutes. Enjoy! These will stay good for about 3 days at room temperature or 5-7 days in an airtight container in the refrigerator.
